It’s Veggie Thursday! (Veggie Thursday is my vegetarian day to force myself to try different vegetable recipes)
I got lazy and didn’t go to the grocery. Lucky for me, I have some sweet peas and bell pepper in the fridge. Time for an experiment!
Do you know the difference between sweet peas (garden peas), snow peas and snap peas? Sweet peas have pods that are firm and rounded and usually sweet. Snow peas have thinner pods, are mildly flavored and are usually used in Chinese stir fry dishes. Snap peas, or sugar snap peas, are a cross between the two other varieties. All three can be eaten raw or cooked.
- 1/2 tbsp olive oil
- 150g sweet peas (or snap peas or snow peas), ends trimmed and strings removed
- 1 red bell pepper, cut into long strips
- 1 tsp garlic
- 1 cup whole kernel corn
- salt and pepper to taste
In a medium pan, heat olive oil. Cook sweet peas and and red bell pepper for 2 minutes under moderate heat. Add garlic and stir for a few seconds. Add corn, salt and pepper and cook for 2 more minutes. Serve on a plate and enjoy!
