Banana Cream Eclairs!

 

I have some overripe bananas this weekend and I wanted to make a dessert from them. I stumbled upon a recipe for Banana Cream Eclairs from TasteofHome . Yum! I love eclairs.

This recipe reminds me of Tokyo Banana – you know the pastry they sell at Tokyo Tower? I often buy several boxes (one or two for myself and the rest gifts to friends!) It’s absolutely delicious. And addictive. That one though is sponge cake filed with banana custard. Mmmmm… maybe I’ll make that next time.

Ingredients:

  • 1/4 cup butter, softened
  • 1/2 cup water
  • 2 tbsp sugar
  • pinch of salt
  • 1/2 cup all purpose flour
  • 2 eggs
  • 1 cup whipping cream
  • 1 1/2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1 ripe medium-sized banana1 tbsp butter, melted
  • 1 oz 60% cacao dark chocolate
  • 1/4 cup icing sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp boiling water (or as much as needed to make a thin glaze)

Directions:

  1. Preheat oven at 200 C or 400 F. Grease a baking sheet.
  2. Add the butter, water, sugar and salt in a saucepan. Bring to boil. Add the flour and stir until a smooth ball forms. Remove from heat and let it cool for 5 minutes. Beat in eggs 1 at a time until dough is smooth and shiny. 
  3. Using a pastry bag with a 3/4 inch round tip, pipe 3-inch strips about 2 inches apart on the baking sheet. Bake foe 30 minutes or until golden brown. Remove to wire racks and immediately split open to discard the soft dough inside. Set aside to cool.IMG_0163
  4. In a large bowl, beat cream until it begins to thicken. Add sugar and vanilla and beat until stiff peaks form. Mash banana in a separate bowl and gently fold into the whipped cream. FIll the puffs with the cream.IMG_0164
  5. Melt chocolate with butter in the microwave for 1 minute (check to make sure it does not get burned). Set aside to cool. Add the icing sugar and vanilla. Add enough water to make a thin glaze. Spread over eclairs. Add other toppings you want (nuts, sprinkles, etc.) Put in fridge to set. Makes 10-12 servings.
